HOW TO MAKE TAPIOCA PEARL
Cooking time: 60 minutes
Recipe
Step 1: Boil Water

Prepare the ratio is 1 : 6, tapioca pearl (2.3 / 2.5) to water.
Step 2: Pour tapioca into boiling water

When water achieves a rolling boil pour in the tapioca pearls.

Expert Tip Use a colander and shake them to remove any small pieces of tapioca or “tapioca dust”.
Step 3: Stir lightly

Lower the heat to medium.

Stir the tapioca lightly within 20–25 minute so that it does not stick to the bottom.
Step 4: Let the tapioca float to the top

After cooking 30 minutes, turn off the heat.
Step 5: Steep the cooked tapioca with lid on

Step 6: Drain the water from the cooked tapioca

Run cold water over the pearls and drain the water from them.
Step 7: Cover in sugar syrup
Prepare the amount of Brown sugar syrup:

Stir them until the sugar is dissolved

Pour tapioca into a Pearl Cooker and soak them into the sugar syrup.

The sugar syrup need to cover the surface of the tapioca pearls.

Let them sit for 15 minutes in the sugar syrup. This will give them time to absorb some of the sweet flavor and reach the best consistency.
Note: Optimal use time for pearl
a) Brown Sugar Tapioca Pearl
4 hours after cooking.
b) Molasses Sugar Tapioca Pearl
4 hours after cooking.
